Dish of the Year 2026 presented at Nour
At Nour, the Michelin-starred restaurant in Stockholm, a unique culinary event has taken place where gastronomy, craftsmanship and innovation came together in a carefully curated experience. The evening revolved around the launch of Dish of the Year 2026, created by Ida Bauhn, presenting a ramen interpretation that combines precision with generosity.
The dish is based on a whole chicken where every component is utilized and interacts with pickled turnip and tare. The result is a nuanced and flavorful experience where classic Japanese influences meet a distinct Swedish expression. The combination creates a dish that balances depth, acidity and umami with a modern Nordic touch – a signature aligned with Nour’s gastronomic philosophy.
In connection with the presentation, this year’s edition of Melleruds Mästarbrygd was also introduced. The non-alcoholic lager is characterized by a soft and rounded profile, with subtle floral notes and a light hint of citrus. The beer is crafted to complement the dish and enhances the overall experience by mirroring its flavor profile without overpowering it.
