Our agenda 2025
In our ambition to create a modern restaurant, we have decided to include an agenda regarding sustainability for this new year. We feel that now is the time our dear guests to be let it on our direction for 2025, so that we remain transparent in our work ahead.
We know that we are far from perfect and nor do we strive to be, but we wanted to underline and enhance the actual work that we’re doing concerning sustainability. For some years now we have always said that we were going to respect Animals, Plants and Planet, with that headline still in our minds, we established the following agenda:
- To carefully select farmers and producers who share our values.
- Establishing a dialogue with the suppliers regarding our demands, and the transparency and traceability of the produce we use.
- Taking the utmost care for every produce, making sure to utilize every part of it.
- Be in tune with the seasons making sure that we also preserve produce when in peak season, to use in the off season.
- Minimize the purchase of imported produce with as few exceptions as possible.
- Minimizing food waste by carefully planning purchases, developing methods for taking care of bi-products and methods for turning ”waste” into gastronomy.
- Reducing the use of disposable products such as paper and plastics.
- Sorting out our garbage according to the regular standards
- Always be curious about new approaches and techniques that can enhance or improve our current work
